I’m not at the beach anymore, but this is still a great dish. Sooooo yummy, healthy, and satisfying. Plus, as an added bonus, you will pee pink and poop purple. It’s a great incentive for kids to eat beets.
4 large carrots, peeled and sliced
2 medium beets (any color), peeled and cubed
1 Tbsp ghee or coconut oil, melted
2 Tbsp balsamic vinegar
salt and pepper to taste
Preheat the oven to 400 degrees. In a pyrex dish, combine all ingredients. Cover with foil, and bake for 35 minutes. Uncover and bake for an additional ten minutes.
