Almost Caprese

It’s so good that you won’t even miss the cheese! I found some amazing fresh basil, beautiful tomatoes, and made my first balsamic reduction. It turned out to be pure heaven and so easy! With the balsamic reduction, be sure to not overcook or reduce too far. If you do that, you will get something that resembles tasty tar. Not at all fun to clean up. Thankfully, I was able to start over after making this huge mistake on my first attempt. The final product was awesome!

3 ripe tomatoes, sliced

10-15 fresh basil leaves (you can leave whole or chop)

1/2 cup balsamic vinegar

2 Tbsp raw organic honey

extra virgin olive oil

salt and pepper to taste


In a small saucepan, combine vinegar and honey. Bring to a boil and then turn to low and reduce until desired thickness (don’t reduce too far or leave at high heat). Arrange tomatoes and basil on a serving plate. Drizzle with olive oil, balsamic reduction, and sprinkle with salt and pepper to taste. Serve.
