Paleo Corn DOGS!!!! I combined the amazing plantain batter with the uncured grass fed beef hot dogs, and made mini corn dogs! The kiddo loved them!!!
Because I didn’t have a ton of lard in the house, used a small saucepan so that what I had enough to submerge them. If you use more fat, you can use a bigger pot, and you can fit more into a single batch.
2 large green plantain, roughly sliced
4 small eggs or 3 “jumbo” eggs
4 tbsp arrowroot powder
2 tsp garlic powder
4 tbsp melted coconut oil
2 tsp lime juice
2 tsp chili powder
2 tsp sea salt
1/4 tsp black pepper
5 hot dogs cut into thirds
1.5 cups paleo approved fat (I used lard)
Heat the fat to 350 degrees in a small saucepan. Spear that hot dogs with a toothpick. Dip the hot dogs into the batter. You may need to use a butter knife or spreader to smooth it and make it look even (if you care how pretty they are). Fry until dark golden brown and crispy, about five minutes on each side. Remove and place on paper towels for a few minutes before serving.
