Woo hoo! Yummy yummy yummy!!! I made such a huge batch of paleo tortillas that I am still able to play around with different uses for them. They’re still SO good, and I’m not even close to being sick of them. I’m bummed that I’m almost at the bottom of the pile, actually. This was a great breakfast using mostly leftovers. I used my ever faithful avocado salsa along with the carnitas from last week. This was a huge win.
Take the tortilla and put it in the oven or toaster oven over lower heat. If you use a setting too high, it burns quickly. Once it is crispy, top with scrambled eggs (I put chives into the eggs and lightly salted them), then add carnitas and a bit of cilantro. Easy Peasy!
