Paleo Bacon Chive Bites

These are tasty AND pretty! They’re also very easy. I got the idea from the PaleOMG blog, and didn’t deviate too much with the bread part. It was perfect with the waffle iron, because the batter is thick enough that it doesn’t pour and thus not really functional as a flatbread of pancake. I highly recommend trying these. I think they would be great as a vessel for chicken salad, egg salad, or tuna salad. I will be posting a football snack using these over the weekend. Pulled pork and mustard sauce topped with a pickle. Can’t beat it!

Ingredients:

  • 2 cups almond meal (I prefer Honeyville)
  • 1/2 tsp baking soda
  • 1/2 tsp garlic powder
  • 1/2 tsp sea salt
  • 1/2 tsp black pepper
  • 3 eggs at room temperature, beaten
  • 1/2 cup coconut milk
  • 2 Tbsp bacon fat
  • 3 slices bacon, cooked and chopped
  • 2 Tbsp chives

Combine all dry ingredients in a bowl. In a separate bowl, add remaining ingredients and whisk together. On a hot waffle iron, drop one Tbsp of batter and cook until desired doneness.
