Spanish Egg Salad Wraps!


Crazy easy, and mighty tasty! Of course, I’m using my paleo tortillas (because they’re awesome, and I’m addicted).

This makes a single wrap. If you are making this for more than one person, simply multiply by the number of wraps you want to make. Also, the number you make will depend on how large you made your tortillas.  I would say that these are 7 or 8 inch tortillas that I’m using.


  • 2 hard boiled eggs, chopped (see this recipe for fail/fool proof easy to peel eggs)
  • 2-3 Tbsp paleo mayo
  • pinch of cumin
  • pinch of sea salt
  • pinch of black pepper
  • 1 tsp fresh cilantro

Combine all ingredients. Heat a tortilla for 15 seconds in the microwave. Place egg salad in the center, fold in the sides, and then roll.
