Crustless Pumpkin Pie

Paleo pumpkin pie cravings! These turned out so awesome, and it was my first time attempting to use gelatin. I’m pretty proud of myself, and my kiddo LOVES these.


It is really the consistency of pumpkin pie as well as the taste. It’s perfect! I used this gelatin, and the results were really tasty.



  • 1.5 cups pureed pumpkin
  • 2 Tbsp raw organic honey
  • 2 tsp pumpkin pie spice
  • 1/2 cup coconut milk
  • 1 Tbsp gelatin


Combine pumpkin, honey, and spices. In a small saucepan, heat the coconut milk to almost boiling and slowly whisk in the gelatin. Very slowly pour into the pumpkin mixture while whisking. Pour into any size container and refrigerate for at least two hours. Enjoy!
