Paleo Chicken Tenders. My little guy always asks to make this, and he loves being part of the process. He is always happy with the results, and the leftovers were happily eaten at school for lunches for several days.
The breading is killer, and such a great trick! It turns out flavorful and crunchy, and it could fool any non-paleo kiddo.
- 1 cup seasoned “breadcrumbs”
- 1 lb organic chicken tenders
- 4 Tbsp ghee (or other paleo approved fat)
- 1 egg, beaten
Melt the ghee over medium-high heat in a skillet.
Dip the chicken into the egg and then in the breadcrumbs.
Cook the chicken in the ghee for three minutes on each side.
Serve with marinara or paleo ketchup!
