Day 1. 3 Ingredient Sausage and Mushrooms over Cauliflower Rice

So far, today’s goal of eating clean and purposefully is going great! I didn’t really have an appetite until around lunchtime (after getting in my 10,000 steps), so my first meal was really lunch. My son had a half day, and he was happily eating his caesar salad (his new favorite thing, though I swear it’s just for the croutons, dressing, and parmesan). After I finished cooking this sausage dish, he started stealing it instead of eating his own lunch. I guess that is a sign of success. My husband had the day off, and he also loved it.

It is definitely made with “convenience” food as everything was somewhat prepared by Trader Joe’s. I stocked up on the mushroom medley so that I could make this again. It only took about fifteen minutes, but should hold up really well as a leftover. I usually strive for less “convenience” foods, but this was still a win.

We also made it to the store to stock up on meals planned for this week. I’m hoping to bust out the pressure cooker for some kind of beef stew!

Just throw the cauliflower rice into a skillet with about 1 Tbsp oil and sprinkle with salt and pepper.

Sausage and Mushrooms over Cauliflower Rice

Ingredients:

  • 1 bag mushroom medley (Trader Joe’s)
  • 1 lb sweet Italian sausage
  • 1 bag cauliflower rice (Trader Joe’s or make your own by pulsing in a food processor)

Method:

Take sausage out of the casings and brown until almost cooked through over medium-high heat. Add mushroom medley and cook for an additional 5-7 minutes. Pour onto a plate. Cook the cauliflower in the former sausage pan (I would recommend using a Tbsp of fat if there aren’t many “juices” left in the pan). Season with salt and pepper to taste, and cook for about 7-8 minutes.
