Basil Egg Salad

After making my easy peel hard boiled eggs, I figured that making egg salad was a logical next step. I had some amazing fresh basil, and this was a magical fit. It was easy, and awesome. The amount of mayo you use really depends on your tastes in texture. I prefer a creamy egg salad, so I go with about 3 Tbsp. I also say this about salt content. It really is up to your own personal tastes.



  • 4 hard boiled eggs, chopped
  • 2-4 Tbsp paleo mayo
  • 1 tsp yellow mustard
  • 1 Tbsp fresh basil
  • black pepper to taste
  • sea salt to taste

Combine all ingredients. Add more mayo, salt, and pepper to your own tastes. Enjoy with bacon đŸ™‚
