Fried Green Tomatoes

Well, the fried green tomatoes turned out great. The rarebit–not so much. I’m going to leave that recipe to my dad from now on. It was a hot mess with a broken sauce. No thanks! It really does suck when you put so much work into “cheating”, and then it turns out tasting like crap with a bizarre texture. Not only that, but I made an ungodly mess that my husband was kind enough to clean up.  I think he felt bad that both he and my son so clearly felt like the meal was a bomb as well. I caught them whispering to each other and negotiating how much each one had to eat in order to be “done”. I appreciate their discretion because I was much more vocal about the whole gross mess.

These are great as a side dish or on burgers. They have a totally unique flavor and texture.



2 large green (unripe) tomatoes, sliced

1/2 cup tapioca or arrowroot flour

1/2 tsp ground black pepper

1/4 cup bacon fat

Heat the fat in a skillet over medium-high heat. Dredge the green tomatoes in a bowl with the flour and pepper. Cook in the fat on each side until brown. Remove to a paper towel covered plate.
