My mother in law was so enthusiastic about hooking me up with green tomatoes!  I cannot tell you how much this excites me. I grew up with a father who not only made amazing fried green tomatoes, but he also cherished them (odd, but not really an understatement).  These are NOT heirloom tomatoes.  They are classic under-ripe tomatoes that have a really wonderful flavor to them.  My dad placed in a cooking contest for his Green Tomatoes Rarebit recipe. It consists of pumpernickel bread topped with fried green tomatoes, bacon, and then an amazing beer cheese sauce that made you feel as though you had died and gone to heaven. It is really hard to find green tomatoes in the store or even at farmer’s markets, so it’s perfect to find a friend or family member who has an abundant tomato crop and doesn’t mind sharing before they turn color. Later today, I will share my paleo version of the fried green tomatoes and also the non paleo rarebit recipe. I’m so excited!
