Nothing is really easier or cheaper than just scrambled eggs. This was my son’s paleo request for breakfast this morning, and it worked perfectly for both of us (hubby is working today).
- 1 tbsp ghee
- 4 eggs, beaten
- 1 Tbsp room temp water
Over medium-high heat, melt the ghee. Combine the water with beaten eggs, and beat for ten seconds. Add egg mixture to the skillet. With a spatula, as eggs begin to set, GENTLY PULL the eggs across the pan, forming large soft curds. Sprinkle with salt and pepper. Serve.
