Paleo Breading

I’m Italian.  I want to bread things. I’m also sticking to the paleo lifestyle, and of course, compliant “bread” is hard to come by. For the record, I couldn’t even stomach a bite of the “Paleo Bread” from Whole Foods.  Anyway, I made my own breading from scratch that was awesome, but it was also a bit too much labor for me. I then found that pork rinds made amazing breading as well. Today, I saw a bag of plantain chips at Sprouts.  Just plantains and sea salt as ingredients. So…I figured I would give those a shot as breading.  I have to say, it was really perfect. Nice and crispy when used with a bit of egg and pork cutlets.  If you can come across plantain chips that are compliant, definitely give this a shot!


Simply put a bag of plantain chips into a food processor with 1 tsp sea salt. Pulse until the pieces are the size you would like for breading.
