Yup…chicken for dinner.


Ok, I have to edit this (sorry hubby), because I really want to share how easy these are to make. All you need to do is take chicken thighs, sprinkle with black pepper and sea salt (I prefer Himalayan), and then put them in a skillet over medium-high with a paleo fat (ghee, avocado oil, bacon fat…).  Cook for about 10 minutes on each side. The skin should be amazingly crispy, and it will be SO juicy. You really cannot go wrong with this.  We ate it two nights in a row because it was soooo good!
