Banana Brownies!

These definitely taste more rich chocolately than banana, but really hitting the sweet spot. They were crazy easy, and I picked up the idea from http://www.deliciousobsessions.com.

Ingredients:

  • ghee or coconut oil
  • 2 overripe bananas
  • 2 eggs
  • 2 tsp vanilla extract
  • 2 Tbsp coconut milk or cream
  • 1/2 cup dairy and soy free mini chocolate chips (at Target and many other stores)
  • 1 cup cocoa powder
  • 1/4 cup raw organic honey
  • 1/2 tsp baking soda

Method:

Preheat oven to 350. Grease a 9×9 pan with ghee or coconut oil.  Put all ingredients except for the baking soda into a blender or mixer. Mix until smooth. Add baking soda and mix on low for 15 seconds. Spread into a 9×9 greased baking pan. Bake for 25 minutes or until a toothpick comes out clean.
