Yes, this was totally worth putting in all caps. White potatoes are up for debate in paleo circles, but the general consensus is that they are ok as long as you’re not trying to watch carbs.  This was SO good.  My husband loved it, and I think that it turned out perfectly.



  • 8 medium potatoes, cooked and cubed (I cook for 20 minutes in boiling water, and then peel)
  • 1 1/4 cups Paleo Mayonnaise
  • 2 Tbsp coconut palm sugar (optional)
  • 1 tsp garlic powder
  • 2 tsp dill
  • 2 Tbsp cider vinegar
  • 1.5 Tbsp yellow mustard
  • 1 tsp sea salt
  • 1 tsp black pepper
  • 1 cup onion, minced
  • 6 hard boiled eggs, diced
  • 3 stalks celery, diced
  • paprika


Cool potatoes to room temperature.  Mix the mayo, sugar, garlic powder, dill, cider, mustard, salt, and pepper in a small bowl.  Add eggs, celery, and onion to the potato bowl.  Add the mayo mixture and stir until combined. Sprinkle with paprika.
