Crockpot Lemon Ginger Chicken

Since it is stupid hot here, I did not want to have to turn on the stove to make dinner. I also had a student up until 6:00, so I knew I couldn’t really cook when I needed to. I decided to have a go at a lemon ginger chicken recipe. I ate this over more cauliflower rice because I could tell that there would be lots of juices.  I know I have been singing the praises of Trader Joe’s now carrying organic cauliflower rice, but apparently, I am not the only one who was excited.  There has been a rush on the cauliflower rice, and all of the Trader Joe’s near me are out of it until AUGUST! Now my lazy butt is going to have to just make it myself.  Next time I see it, I am buying 50 bags and throwing them into the garage freezer. I’m sooooo mad at myself for not buying more when I saw it there last time.

Ingredients:

  • 5 lbs bone in chicken
  • 1 medium yellow onion, diced
  • 4 cups chicken broth
  • 2 lemons, sliced
  • 1/2 cup chopped fresh parsley
  • 1 pinch saffron
  • 1 tsp sea salt
  • 1 tsp black pepper
  • 1 Tbsp chopped garlic
  • 1/4 cup minced ginger
  • 2 Tbsp chopped cilantro

Put all ingredients into the crockpot with the exception of the cilantro. Cook on low for 4-5 hours (my crockpot runs hot so I go for the lesser time). Garnish with cilantro and serve over cauliflower rice.
