Chimichurri Rice

Another perfect use for the Chimichurri sauce is the chimichurri cauliflower rice. Using the frozen organic cauliflower rice from Trader Joe’s makes this SO much easier.

  • 2 Tbsp bacon fat or other paleo approved fat
  • 1 head of cauliflower, riced (or a bag of Trader Joe’s riced cauliflower
  • 1/4 cup diced yellow onion
  • 3 cloves crushed garlic
  • 1/3 cup chimichurri sauce (taste first to see if you want to use more or less)


In a skillet, saute all of the ingredients except for the chimichurri sauce. Cook for 15 minutes over medium-high heat. Remove from heat and stir in the chimichurri sauce.  Add more or less depending on how strong you would like it to be.
