Meat and Veggie Egg Bake

My friend, Nikki, has been eating this all week.  I know a lot of people struggle with breakfasts, so this seems like a great solution to the busy mornings during the week! You can put whatever veggies or meats you want, but this is a good place to start.

Ingredients:

  • 1 dozen eggs
  • 1 lb ground meat (sausage, hamburger, turkey…)
  • 2 handfuls of spinach
  • 1 medium onion, chopped
  • 1/2 tsp sea salt
  • 1/2 tsp ground black pepper
  • tomato (optional)
  • salsa (optional)
  • guacamole (optional)
  • cayenne (optional)

Method:

Preheat the oven to 350 degrees. Cook meat until browned. Whip the eggs until scrambled, and add remaining ingredients. Put all ingredients into a greased (ghee) pyrex baking dish. Bake for about 30 mins or until eggs are done in the middle!  Works great to make ahead of time and warm up on demand. Add some salsa or guacamole for an extra kick!
