This was a really great way to get a hint of sweet into my day. I could see this as either a great side dish or dessert. It took moments of prep, and 30 minutes to cook. It was SO easy, and my son really liked it.
- 2 cups cubed butternut squash
- 1 Tbsp ghee
- 1/2 tsp pumpkin pie spice
- 1.5-2 Tbsp grade B maple syrup (depending on how sweet you want or how high the sugar content)
In a skillet, melt ghee over medium-high heat. Add the squash and cook for approximately 30 minutes or until the squash is tender. Stir occasionally. Add the spice and maple syrup and simmer for one more minute.
