My friend, Zeynep, got her Sunday started with this paleo frittata. It looks sooooo good!


Preheat oven to 350 degrees. Half yellow onion, diced and cooked in one tablespoon of ghee until brown (and with a pinch of salt). Add sausage (about 7-8 oz). 1-2 minutes later, add mushrooms (1 cup) and spinach (1 cup), and cook them until all the juice is dry. Mix them with 6 eggs in an oven-safe dish and cook for about 35 minutes. Some people do it with iron cast skillet. In that case, you just add the eggs on the mix and cook in the oven for about 20 minutes.
