Taco Eggs

I love my homemade taco seasoning. I made this as a single serving, so you have to adjust the ingredients to however many people you are trying to serve.



  • 3 eggs, beaten
  • 2 slices uncured bacon
  • 1/4 cup chopped onion
  • 1/2 tomato chopped
  • 1/4 avocado, sliced
  • 1 Tbsp sliced olives
  • 1/2 tsp taco seasoning (more if you like it stronger)
  • 1/2 tsp chopped chives

Cook the bacon over medium-high heat. Remove to paper towels and pour bacon fat out of the skillet. Over medium heat, cook the onion in the same skillet that was used for the bacon (don’t clean it out). Cook until onions are translucent. Add eggs and scramble. Put into a bowl and top with remaining ingredients.
