Well, almost…This is my friend Melissa’s super easy chicken that she had for dinner last night. Her husband absolutely loved it, and it was mindlessly simple.
- Boneless, skinless chicken thighs
- garlic powder
- 1-2 Tbsp avocado oil (or other paleo approved fat)
Sprinkle the chicken with garlic, salt, and pepper. Heat oil in a skillet and cook the chicken for about five minutes on each side. Remove the chicken from the pan and cook the mushrooms in the remaining oil and seasonings until desired tenderness.
