Red Curry Fish

I LOVE having paleo friends! They do things that I would never have even though of.  Paleo buddy, Zeynep, made this for dinner this week, and it looks amazing!



  • 2 shallots, finely diced
  • 1 Tbsp ghee
  • 1 Tbsp thai kitchen red curry paste
  • 1 cup chicken stock
  • 1 cup unsweetened coconut milk
  • 1/2 butternut squash (or about 12 oz.)
  • 1 lb fish (catfish, halibut, mahi mahi, cod…)
  • juice of one lime

Cook shallots with ghee until they change color (2-3min). Add thai kitchen red curry paste, chicken stock, coconut milk, and  butternut squash. 6-7 minutes later add the fish. Cook for 6-7 more minutes. Serve with some lime juice drizzled over the top.
