This was awesome and easy! Ten minutes of prep, tops!
- 6 boneless, skinless chicken thighs
- 4 roma tomatoes, finely chopped
- 4 cloves garlic, crushed
- 3 Tbsp avocado oil (or you could use melted coconut oil or light olive oil because of the higher smoke point)
- 1/4 cup chopped fresh basil
- 1/2 tsp black pepper
- 1/2 tsp sea salt
- 1 Tbsp balsamic vinegar
Preheat oven to 350 degrees. In a baking dish, put the chicken into a single layer. Combine all other ingredients in a bowl and mix. Spread the tomato mixture over the chicken. Bake for 30 minutes or until chicken reaches 165 degrees.
