Taco Salad

You will have to ignore the tortilla strips in the picture. I made them from scratch, they were pretty and perfectly paleo, but they were not the right texture at all for this dish.



  • 2 Tbsp avocado oil or other paleo approved fat
  • 1 lb ground beef
  • 1 Tbsp paleo taco seasoning
  • lettuce
  • tomato, chopped
  • black olives, sliced
  • cilantro, chopped
  • green onion, chopped
  • avocado, cubed
  • salsa
  • chopped onion (red or yellow)
  • jalapenos, chopped

Brown the beef in the oil. Add the taco seasoning and simmer for an additional 5-10 minutes. In a bowl, place a bed of lettuce and ground beef along with any other toppings you desire. Finish with salsa and then toss.
