Easy Salmon!


My husband was on call for jury duty yesterday, so we took a very costly trip to Costco.  It really is such a dangerous place. I did find some wild salmon that was caught the same day, so I figured we could make something with it for lunch. I soooo love lemon and wine with fish, so I gave that a shot. I know that the wine is up for debate with paleo people, but I noticed Danielle Walker using it in her new cookbook so I figured why the hell not!  It was GREAT! Both husband (who ate it for lunch and dinner) and son (who ate it for dinner) loved it.


  • 1/2 cup chicken broth
  • 1 Tbsp ghee
  • 1/4 cup lemon juice
  • 1/4 cup dry white wine
  • 3 tsp capers
  • 4 filets wild salmon
  • 1 Tbsp avocado oil, bacon fat, coconut oil, ghee… (or any other friendly paleo fat)
  • salt and pepper


In a small saucepan, combine the first three ingredients. Bring to a simmer. While waiting for the sauce to simmer, melt paleo friendly fat in a skillet. Season the salmon with salt and pepper. Cook salmon over medium heat for about 3-5 minutes on each side (depending on how you like your salmon). Add wine and capers to the simmering sauce, and cook for an additional minute. Pour over the salmon, and serve!
