For some reason, people have this idea that you have to have tons of time on your hands to cook paleo meals. I’m here to say, that’s crap! This was just too simple. It only took about 20 minutes from beginning to end. I also have lots of other recipes that are incredibly quick and simple, so this is not an anomaly. Give it a shot, people!
In a skillet over medium-high heat, melt 1 Tbsp bacon fat. Add six boneless, skinless chicken thighs and cook for 2 minutes on each side. Add 1, 12oz can organic crushed tomatoes, 1 Tbsp chopped basil, and cut up broccolini to the skillet. Season with salt and pepper. Reduce heat to medium and cover for 15 minutes. Check the chicken for doneness and serve!
