Deviled Chicken Salad

If you have a lot of my leftover chicken salad (one of the best recipes on this site), then here is a great option if you want to change it up.  The bacon is optional, but highly recommended. You could also use cucumber slices or just eat with a fork!

Ingredients:

  • 1 cup paleo chicken salad
  • 2-4 hard boiled eggs, chopped (depending on how “eggy” you want it
  • 1 Tbsp paleo mayo
  • 1 tsp yellow mustard
  • 1/2 tsp white vinegar
  • 1/2 tsp black pepper
  • salt to taste (optional)

Combine all ingredients and enjoy!
