These were so great with dinner, but my husband is really looking forward to having them with eggs for breakfast tomorrow. This was incredibly easy.
- 1 large white sweet potato, peeled and cubed (approx. 1cm)
- 1 medium onion, chopped
- 6 slices uncured bacon
- 1 tsp salt
- 1 tsp black pepper
- 3 garlic cloves, finely chopped
Cook the bacon in a large skillet over medium-high heat until crisp. Remove the bacon to a plate covered in paper towels. Add the onion and potato to the bacon fat already in the skillet. Add salt and pepper. Allow to cook for about 20 minutes, stirring occasionally. Do not stir often as it will not allow potatoes to brown and will also break them down once they start to get softer. Add the garlic and cook for an additional 3 minutes. Top with bacon.
Serve as a dinner side dish, or topped with eggs for breakfast.
