Lots of Goodies this summer!

I’m just loving that it is summer break.  I can be home for dinners (as opposed to making them early and then eating them for lunch or as leftovers). I still have over half of my balsamic cilantro sauce, so I am putting it on whatever protein I can get my hands on. I was really excited to find wild salmon at Costco today, and it was a perfect match for the sauce. With the cantaloupe and white sweet potato bacon home fries, it was a very complete and tasty meal. My little man ate every bit on his plate.

Salmon:

All that is required is salt, pepper, and avocado oil.  Preheat the oil (2 Tbsp) over medium-high heat.  Season the salmon with salt and pepper.  Cook with skin side down for 3-5 minutes, turn and cook for an additional 3-5 minutes. Eat plain or with balsamic cilantro sauce.
