Sweet OR Spicy Chicken Wings

I am still experimenting here, but so far these were pretty good.  I made a spicy batch for my husband, and a sweet batch for myself and my son.  I had two different bags of marinade going, but the only ingredient difference was the presence of Sriracha in one of them. You can divide the marinade, or make it how you would like for one ideal batch.

Ingredients:

  • 3 lbs organic chicken wings
  • Juice of one orange
  • 1/2 minced red onion (or 3 finely chopped green onions)
  • 1/2 tsp minced ginger
  • 1/2 tsp minced garlic
  • 1 tsp honey
  • 1/2 tsp sea salt
  • 1-2 Tbsp Sriracha sauce (optional)

Combine all ingredients into a large bowl. Cover and marinate for 1 hour. Preheat oven to 425 degrees. On a parchment lined cookie sheet, place the wings far enough apart that they don’t steam each other. Sprinkle a bit of salt over the top. Bake for 30 minutes, turning the chicken over half way through (sprinkle salt on the newly exposed side).  Remove from oven and allow to rest for five minutes.
