This was SO easy! I just shipped them up for my lunch with leftovers for the guys to eat later.
- 1-2 Tbsp coconut oil, lard, bacon fat, avocado oil, ghee…
- 1 lb organic chicken tenders
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp sea salt
- 1/2 tsp ground pepper
- juice of 1/2 lemon
Combine all spices in a bowl. Melt oil in a large skillet over medium heat. Sprinkle over and rub into the chicken on both sides. Cook chicken on 3 minutes on each side (or until cooked through). When you turn the chicken, sprinkle with the lemon juice and continue to cook the opposite side.
