Chicken, Bacon, and Cabbage, oh my.

This was actually incredibly simple, but also very good, and I was able to throw it together before work.  I have to really force myself to eat my veggies, so getting the cabbage in the recipe was good for me.  Cabbage is incredibly healthy, so it is a great option for a quick meal.  

Ingredients:

4-6 chicken thighs, cubed

1 head cabbage, shredded

3 shallots, sliced

6 slices of bacon, cut into 1/2 inch pieces

Salt and Pepper to taste

Method:

In a skillet over med-high heat, cook the bacon until crispy.  Remove the bacon to a paper towel, but leave the grease in the pan.  Cook the chicken until it is no longer pink on the inside (about 10 minutes). Remove the chicken to a plate, but be sure to leave the juices in the pan. Add shallots and cook for 3-4 minutes. Add the cabbage.  Cover and cook for ten minutes. Add chicken to the cabbage mixture and season with salt and pepper. After plating, add bacon to the top.
