Honey Roasted Rainbow Carrots

Ingredients:

  • 6 large rainbow or regular carrots, thinly sliced (I used a food processor with the slicing blade)
  • 1/4 cup raw organic honey
  • 1.5 Tbsp avocado oil, melted coconut oil, or ghee
  • salt and pepper to taste

Method:

Preheat the oven to 350 degrees. In a bowl, combine all ingredients in a large bowl until the carrots are all separated and coated. Bake for 35 minutes.
