I decided that since it was cold outside and I needed to get back on the bandwagon, this soup would be the perfect fix. Given the fact that I received a vitamix for xmas, I will probably be attempting a few soups this month.
My son loved his bowl of soup, and was excited for more.
- 1 cup steamed cauliflower (steam with the garlic cloves)
- 3 cloves garlic
- 1 Tbsp bacon fat
- 1 Tbsp ghee
- 1 tsp black pepper
- 1 tsp sea salt
- 5 basil leaves
- 1/2 yellow onion
- 1 carrot (optional)
- 1 cup homemade or organic chicken stock
- 2.5 cups organic crushed tomato
Reserve the cauliflower. Put all other ingredients into a large pot and simmer for 30 minutes. Put all ingredients in your blender, food processor, or Vitamix. On the vitamix, I used the “hot soup” setting. I like my soup pureed. If you like your chunkier, then you can blend accordingly.
