I haven’t found any research in the last several decades that support the idea that animal fats contribute to heart disease. It seems to be a really outdated, yet widely accepted, “fact”. Current research says that we’ve all been lied to about fats and sources of cholesterol. This is a nice, easy to read, article that helps to hammer this home. Before starting Paleo, I found that I had “borderline” cholesterol. I put that concern aside since I was already overwhelmed with all of the infertility treatments, but I will be looking at this again in January. That will give my body four months of Paleo, and it will be interesting to see the affects on my blood chemistry.
