I wanted some serious protein after my carb-fest this weekend (which I blame for my headache and lethargy) so I decided to make use of the paleo mayo that I made last week. Also, what better to get back into the paleo swing than BACON!
5 slices uncured bacon (Trader Joe’s)
1.5 Tbsp Paleo Mayo https://infertilitythouartaheartlessbitch.wordpress.com/2013/11/06/homemade-paleo-mayo/
1 tsp dijon mustard
2 hard-boiled eggs, peeled and diced
1/2 tsp sea salt
1/4 tsp black pepper
Cook the bacon in a skillet until crispy. Remove to paper towels and allow to drain and cool (save your bacon grease for future use in the refrigerator). Add all other ingredients to a bowl and mix well. Once the bacon is cooled, cut up into bite-sized pieces and top with the egg salad. Great snack!
