Potluck Paleo

I have a dear friend who wanted to make something paleo for a workplace pot luck. We thought that something with bacon would be a hit and we were right. In her words, “My Sweet Potato Hash was the hit of the party and gone in seconds!!”

She used white sweet potatoes, which I think gets more people to give it a try. A lot of people have it in their minds that they don’t like sweet potatoes.

You may need to cook in 2-3 batches so that the potatoes are able to cook evenly.

Ingredients:
12 cups cubed white sweet potato
3 lbs uncured bacon (Trader Joe’s is my favorite)
2 large yellow onions, diced
salt and pepper to taste.

Cook the bacon in a skillet. When it is crispy, remove the bacon and set aside. Cook the potatoes and onion in the skillet with the bacon fat. Season with salt and pepper. When the potatoes are done (tender, but not mushy), add bacon back into the mixture and stir to combine. Do in batches, if necessary.

For those of you unopposed to using a microwave, it can be reheated in 12 minutes for that office pot luck. If you have a crock pot, you can just reheat it slowly.
