I was SO happy cooking with this view. I think it has ruined me. I may never want to cook at home again…
I say that, but if I’m doing paleo and don’t cook at home, I will starve. So I guess I have to suck it up and cook in my crappy meager kitchen where I bump buts with my husband if he’s doing dishes and I’m attempting to cook at the same time. Pish!
4 large carrots, peeled and sliced
2 medium beets (any color), peeled and cubed
1 Tbsp ghee or coconut oil, melted
2 Tbsp balsamic vinegar
salt and pepper to taste
Preheat the oven to 400 degrees. In a pyrex dish, combine all ingredients. Cover with foil, and bake for 35 minutes. Uncover and bake for an additional ten minutes.
