These were SO simple! Both my husband and son enjoyed them, and neither of them are big beet fans. I used rosemary in mine, but I think it would be even better without. It just didn’t need that extra texture or flavor.
4 medium size beets, peeled and cubed (I like to use both the yellow and traditional)
2 Tbsp balsamic vinegar
1 Tbsp ghee, melted
1/4 tsp black pepper
1/4 tsp sea salt
Bake covered in a 9X13 pyrex at 375 degrees for 35 minutes. Bake uncovered for 10-15 more minutes until beets are fork tender. SO EASY!!!
