Paleo Pancetta Chicken

If you aren’t making my herb mushrooms (, then you can also make this sauce just for the chicken.

1/3 cup kerrygold butter, melted (or use ghee)
3 cloves garlic, chopped very finely
2 tbsp fresh thyme, chopped (or one tablespoon of dried)
juice of one small lemon
1 package of diced pancetta (Trader Joe’s)
1 lb organic chicken breast tenders (Trader Joe’s)
1/2 tsp sea salt
1/4 tsp ground black pepper

Preheat the oven to 350 degrees. In a bowl, combine all ingredients except for the chicken and pancetta. If you are using dried herbs, you may want to let the mixture sit for a bit so that the herbs rehydrate. Place the chicken in a glass baking dish, and pour the mixture over it. Sprinkle the pancetta over the top. Bake for 15 minutes.

You can serve this with the cauliflower and broccoli mash ( or just the cauliflower mash (
