I grew up eating an amazing recipe invented by my dad that included fried green tomatoes, a beer cheese sauce, bacon, and pumpernickel toast. It is phenomenal. Although I cannot indulge in 75% of that recipe, the heart of it was the fried green tomatoes. They taste nothing like regular tomatoes, and have a very distinct and wonderful taste.
One green tomato
1/2 cup tapioca flour
1/2 tsp ground black pepper
1/4 cup bacon fat, coconut oil, or lard
Slice the tomato to about 1/4 inch in thickness.
Combine the tapioca flour and pepper in a bowl.
In a separate bowl, beat the egg.
In a pan, heat the bacon fat on medium.
Dip the tomato in egg, then in the flour mixture, and then place into the hot oil.
Cook on each side until desired doneness (I like a little bit toasty color…do NOT blacken)
Remove from pan and place on paper towels.
Immediately salt the tomatoes.
EAT AND ENJOY!
I am tempted to try these on a burger.
