Paleo Chicken Tenders and Paleo Ketchup

My 7yo asked for chicken tenders for dinner. I think he was expecting me to grab a bag out of the freezer and utilizing the microwave. Not anymore! I busted these puppies out, and his response was “These are over my mind! They’re better than regular ones!” And he proceeded to eat three of them (I only had enough appetite for two). Paired with the paleo ketchup, and it was a perfect combination. (


  • 1 lb organic chicken tenders (Trader Joe’s)
  • 1/2 cup tapioca flour
  • 1/2 tsp granulated garlic
  • 1/4 tsp cayenne pepper
  • 1/2 tsp onion powder
  • 1/2 tsp sea salt
  • 1 egg
  • 1/2 tsp water
  • 1/2 cup lard or palm shortening
  • sea salt
  • ground black pepper

Method: Put the flour, garlic, cayenne pepper, onion powder, and sea salt into a bowl and mix.  On a plate, beat the egg and water with a fork.  Heat a skillet with the lard or shortening on medium heat.  Dip the chicken into the egg mixture, then into the flour mixture before gently placing into the oil.  Do this with each piece, cooking for about 3-4 minutes on each side.  Remove from the skillet  when they’re toasty and crispy, and place them on paper towels. Season with salt and pepper to taste.  Serve with paleo ketchup!
