I was really wanting something sweet, but thinking I needed to lay off of the leftover banana bread that’s staring at me. This turned out so amazing, that it is more like a dessert than a side dish . I will be making this for my son for dessert, since I know he will absolutely love it.
1 Tbsp coconut oil
1 butternut squash, peeled and cubed
2-4 Tbsp grade B maple syrup or honey (depending on how sweet you want it to be
1 Tbsp butter or ghee
1 tsp cinnamon
1 pinch of salt
Heat the coconut oil in a pan and add the butternut squash. Cook for about 10-15 minutes turning the pieces occasionally. Add desired amount of maple syrup depending on your liking. Add butter and cinnamon and stir gently. Enjoy!
