My closest PCOS/Paleo sister asked me to make a recipe similar to this to see if it was good. As most of us know, ingredients are expensive with the paleo lifestyle, so it makes sense to KNOW if something is good before experimenting with costly ingredients.
I modified the recipe a bit with one ingredient that I wanted to try (cacao butter–not to be mistaken for cocoa butter), and I made this a bit more insulin friendly by substituting using both Stevia and honey (this should not be a daily treat for those doing the paleo lifestyle for weight loss or insulin resistance). This could also be made with almond flour instead of almond meal.
What you will need:
1 tsp cacao butter (NOT cocoa butter), ghee, or coconut oil
3 tbs of almond meal
2 tbs of cocoa powder
5 drops pure stevia (Trader Joe’s)
1 tbs of honey
1 tsp of vanilla extract
a pinch of salt
1/2 tsp cinnamon
Combine all ingredients in a microwave safe dish or cup.
Microwave for 2 minutes (or 1:30-1:45 if you have a powerful microwave).
