Paleo Chai Latte!

I was pushed (or I should say shoved) to remake this by my 7yo son because he is home sick. It certainly took his mind off of how yucky he feels, and it turned out great.

After five weeks without a single drop to drink other than water, I needed to try to make this. I used unsweetened almond milk (see photo guide to staples), cardamom, stevia drops (must be pure with NO other ingredients), cinnamon, ground cloves, and nutmeg.

People have very different tastes when it comes to chai. Some like it sweet, some like it spicy, and some like it watered down. Just play with it. It is SO worth it! I used a stick blender because those spices like to just float on top. I also heated it near the end and then put the finishing touches with spices. It’s hard to taste test cold (in my opinion).

Ingredients:

  • 3 cups almond milk (READ THE LABEL so that you are sure there are no added ingredients)
  • 1/4 tsp ground cloves (more if you like it “spicy”)
  • 1/2 tsp nutmeg
  • 1/2 tsp cinnamon
  • 20 drops pure stevia extract (or 2 Tbsp honey or grade B maple syrup
