This really turned out SO perfectly. I am NOT a fan of green vegetables and noticed that my focus had been on creative ways of working with root vegetables and Paleo sweet treats. I decided to give my cauliflower mash a try WITH broccoli mixed in. It was WONDERFUL. I really couldn’t taste the broccoli and it just tasted with my usual mash with a bit of healthy green. I highly recommend it!
- 1 head cauliflower cut in pieces in preparation for steaming
- 6 oz broccoli (about 1.5 cups) cup in pieces in preparation for steaming
- 6 cloves garlic cut in half
- 1.5 Tbs ghee
- 4 slices of bacon
- 1.5 Tbs bacon fat rendered from the bacon
- 1 tsp pepper
- 1 tsp salt
Steam garlic, broccoli and cauliflower for ten minutes (I bring the water to a boil in the steamer before starting the timer). While you are doing this, cook 3-4 pieces of bacon. Reserve the fat for use in the mash.
Put steamed vegetables into a food processor. Add the remainder of ingredients and puree. You need a lot of salt and pepper, so keep tasting your puree to see if it has the right adjustment of seasoning for your individual taste. Top with the pieces of bacon and serve.
