Sweet Potato Hash with Italian Sausage and Egg. It was SO FULFILLING!!!! Simply take two large or three small sweet potatoes, peel and cut them up into whatever size pieces you prefer for hash. Then, take 1lb of italian sausage or breakfast sausage (I made my own with ground pork) that is free of added nitrates, sugars etc. Cut up half of a white onion (I like the sweetness). Put a couple of tablespoons of either avocado oil, coconut oil, ghee, palm shortening, or lard into a pan and brown everything. Let it cook long enough for the sweet potato to soften up. Cook an egg separately and season with salt and pepper. That’s it! It was AMAZING and I have lots of leftovers for the week!
